Geoduck (pronounced gooey-duck) is a species of saltwater clam. Not only are these the largest burrowing clams, they also have a typical lifespan of 140 years! As a bivalve, geoduck are beneficial to the marine environment, filtering water to obtain their nutrients and then excreting nitrogen and other nutrients to feed neighboring organisms. These geoduck are family-farmed in Totten Inlet, Washington then smoked and tinned with organic brown sugar, sea salt, black peppercorn, paprika and garlic powder.
Spring is the season for pop-ups!
I’ll be hosting a series of pop-ups in Portland and out of town during the next few months and can’t wait to continue creating tiny fish dishes for you to enjoy. Future dates and locations will be released both here and on social media platforms.
It seems as if the whole world is finally coming out of hibernation. My schedule is getting busier each day and I couldn't be more grateful and excited to keep creating and moving forward. Last week I had the pleasure of spending the week in Austin, Texas with Indie Chefs Community, a fantastic organization that brings chefs of all different walks of life together for a weekend of collaborative dinners, meaningful conversations about the food and restaurant world, and a whole lot of laughs. Pictured above is my dish; sesame balls filled with tinned rockfish, pork and szechuan peppercorn sausage. While I have shifted my food focus out of restaurants and into consumer packaged goods, I am still and always will be a cook at heart. This weekend was a great reminder that I do have a unique perspective and shouldn't stop trying to carve out my own path in the food world until I truly find my happiness and where I fit in.
