It’s spring! Here’s what we’re cooking…
Asparagus & Sole Salad …. Side Dish …. you decide!
1 bunch asparagus, trimmed and cleaned
1 Tbsp. olive oil
pinch of sea salt
1 can Sunshine & Sole
1 Tbsp. dijon mustard
1/4 cup chopped green olives
1/2 cup picked parsley*
Preheat your oven on the high broiler setting for 5 minutes. Place a cast iron pan into the oven while it is heating. Toss the asparagus, olive oil, and pinch of salt together and then transfer to the heated cast iron pan. Let the asparagus cook under the broiler for 7-10 minutes, depending on the size of your asparagus and the desired doneness.
While the asparagus is cooking, make the sauce. Open the can of Sunshine & Sole and drain the liquid into a small mixing bowl. Stir in the dijon mustard and chopped olives until thoroughly mixed. Gently flake the sole in the can with a fork, then transfer to the mustardy mixture in the bowl. Add in the picked parsley and a pinch of salt as needed. Gently stir the sauce together.
Once the asparagus is roasted, transfer to a serving plate and then spoon the sauce over the top. This is a great side dish or salad and can be served warm or cold.
*I used parsley, but you could also use a mixture of herbs, including mint, dill, celery leaves, or cilantro. Frisee, curly endive or radicchio would also make a lovely addition to this dish and make it a more substantial salad, great as a light dinner on a warm spring evening.
